Why coriander wilts so fast in the fridge, explained
Coriander's thin leaves, soft stems and large surface area make it lose water quickly, food science expert Alok Singh explains. Once cut, it can't absorb water, yet keeps losing moisture through stomata, so cells lose turgor pressure and droop. Circulating cold air in frost-free fridges speeds drying, while trapped excess moisture can encourage microbes and yellowing.
